One of the most well known and researched microgreens, Red Acre Cabbage is widely regarded as a superfood for its amazing nutritional density. With violet stems and highlights to deep green leaves, it is a quite distinct green with a very mild cabbage flavour. Incredibly dense in Vitamin C, it also contains high amounts of Glucosinolates that get broken down by the body into Isothiocyanates, which research is increasingly showing has the ability to inhibit carcinogens. Popular in salads, as garnish, or juiced, Red Acre Cabbage is a great microgreen to have around!
